Curry from whole spices

Every afternoon at three, the curry side of the kitchen toasts cumin, coriander, cardamom and fennel, grinds them and starts the bases. A good rogan josh needs three hours; the dal needs its tarka sizzled in at the last minute.

It is slower than opening a jar, and you can taste it. Find the full line-up under Curries.
